The olive tree needs pruning regularly. This task is carried out when the tree is latent, that is since January to March.

If the trees have been abandoned for a long time they need to be "crowned" (cutting of a lot of the thick branch so that strong new shoots grow). This operation requires the use of a chain-saw, and the remains must be burnt before spring comes.

After two years, training is carried out, that is thinning out the branches that have started to grow de reshape the tree. After another two years olives can be harvested.

Harvesting is not the main problem; now there are other headaches .. such as how to make oil from three hundred kilos of olives 400 metres above and 2 kilometres away from the nearest road. That's why the donkeys come onto the scene.....
